I made this on a night where I forgot about dinner. I just threw some leftover carrots, broccoli, pre-cooked beets, and pine nuts in the skillet and cooked them with some coconut oil. I wasn’t sure if it would work out, but the flavors went nicely together and it was pretty filling.
I brought cornbread mix and almond milk and mixed them in a shaker. Everything turned out pretty well, except the sweet potatoes which took a little extra cooking.
